Baked Chicken Roll with Potatoes

When we did planning for our family Christmas Eve dinner, my sister-in-law saw this recipe on Foodies of SA Facebook page and we just had to make. For Christmas Eve dinner we always divide the courses that everybody make something, and I ended up with the chicken roll. I had so much fun making this and it tastes amazing #familydinnerchallenge
Baked Chicken Roll with Potatoes

Heat the olive oil in a pan over medium heat. Add the mushrooms and fry for 5 minutes until golden and tender.

Stir in the spinach and garlic and fry for 5 minutes until spinach is soft.

Add the parsley, salt and pepper. Set aside to cool.

Preheat the oven to 180'C.

Place the chicken thighs in a zip lock / plastic bags (or between 2 sheets of plastic wrap), gently flatten with a rolling pin to 1/2 cm thick.

Place sheets of plastic wrap on the counter top. Arrange the bacon strips on the plastic wrap, slightly overlapping each other.

Lie the chicken thighs down on off the bacon. Arrange them in rows of 3 slightly overlapping each other. Leave a gap on top of the bacon, do not place chicken thighs there for rolling.

Mix the cream cheese in a small bowl until smooth and spread over the chicken. Be gently to not move the packed bacon and chicken.

Sprinkle the cream cheese with vegetable / chicken spice.

Starting from the long side closest to you, roll the chicken up and use the plastic wrap to guide you in forming the roll-up.

Cover the base of a large oven dish with olive oil.

Rinse and wash the potatoes. Optional to peel potatoes, I keep the skin on if oven baked. Chopped into cubes.

Add the potatoes on the sides of the over dish. Leaving a space in the middle for the chicken roll.

Place the roll seam-side down in the middle of the oven dish. Very important to have the open side facing down!

Melt the butter and pour over the potatoes. Add the rosemary, salt and pepper.

Bake for 40-50 minutes until the bacon is crispy and the chicken and potatoes are cooked through.

Allow the chicken roll to cool for 10 minutes before cutting into thick slices. Serve a thick slice of chicken roll on top of a portion potatoes.
