Sauteed potatoes

Peel, cut your potatoes in rounds. Wash. Boil for about 6 minutes in salted water. Drain, rinse and set aside.

In a sauce pan, add vegetable oil and onion. Add in chopped tomatoes and tatase. Season with salt and buillion cube. Add oregano. Stir fry.

Break eggs, add a little ginger powder. Whisk. Add to your pan and continue to stir fry for about a minute.

Add in your boiled potatoes. Stir thoroughly till potatoes are well coated with the sauce. Lower flame and cover. Cook for about 3 to 4 minutes.

Add your sweet pepper and parsley and allow to simmer. Serve hot
