Egg and Tomato Soup

Today, I made egg and tomato soup with some imitation crab meat for a bit of texture. I used pork and chicken bone broth to give it a naturally sweet aroma.
If you don't want to make your own broth, you can use Knorr bouillon cubes, either chicken or pork, according to your preference.

Start by making the broth. Clean the pork and chicken bones thoroughly. Boil water and pour it over the bones until the outside changes color. Then, place them in a pot, covering with about 4 to 6 1/3 cups (1 to 1.5 liters) of water. Add salt and 2 crushed green onions (I forgot to add them in the picture).

Simmer on low heat for 12 hours. After 12 hours, the broth is ready to use. If you're not making your own broth, skip to step 3.

Cut the tomatoes into medium pieces, sprinkle with 1 teaspoon of salt, and mix well. Let them sit for 15 minutes to enhance their flavor. Meanwhile, beat the eggs in a bowl and set aside. Mix cornstarch with 2 tablespoons of water in another bowl and set aside.

Heat a pot and add a little oil. Add the chopped white and firm parts of the green onions and sauté until fragrant. Add the tomatoes along with their juices and cook until they soften slightly. Then, add about 3 1/4 cups (750 ml) of broth (for two servings). Adjust the amount of broth based on how much you want to make.

Let it simmer gently for 3-5 minutes. Add the cornstarch mixture to thicken the soup slightly. It should be less thick than a gravy or fish maw soup.

After simmering gently for another minute, stir the soup and slowly pour in the beaten eggs in a thin stream, stirring to break them apart. Add the imitation crab meat in larger pieces. Season with soy sauce, black pepper, and sesame oil. Taste and adjust the seasoning to your liking. Finally, add the roughly chopped green onion tops and stir until they are cooked.

Serve in bowls and enjoy.
