I am learning to do different things with rice paper and absolutely loving it. These rice paper shrimp tacos were so easy to make. Its a bit of fusion recipe. Super tasty. Ingredients

  1. ingredients for rice paper shrimp taco’s
  2. 1) 2 rice paper
  3. 2) ¼ cup oil
  4. for a simple guacamole
  5. 3) ½ tsp garlic powder
  6. 4) ½ tsp onion powder
  7. 5) ¼ tsp cayenne
  8. 6) a pinch of cumin powder
  9. 7) salt to season
  10. 8) 2 tsp lemon juice
  11. for the shrimp mix
  12. 9) 1lb cooked shrimp (chopped)
  13. 10) 2 tsp kewpie mayo (or regular mayo)
  14. 11) 2 tsp sriracha
  15. 12) 1 tsp sesame oil
  16. 13) 2 tsp chopped green onion
  17. 14) 2 tsp chopped cilantro
  18. 15) salt to season if needed (I didn’t add any)

    Step 1- cut the rice paper in half, then cut the half in half, then the quarters into halves, so getting 8 small triangles in total. Edges wont be smooth since the rice paper is quite brittle, which is fine

    Step 2- making a simple guacamole.
    Cut the avocados in half. Take the seed out. I used a blender to make the guacamole very smooth. You can just hand mix it too. Add ½ teaspoon garlic powder, ½ teaspoon onion powder,¼ teaspoon cayenne, a pinch of cumin powder, salt to season, 2 tsp lemon juice. Use a blender or just hand mix it to make it smooth.

    Step 3- I used cooked shrimp which were cocktail shrimps. You can use any cooked shrimp, or cook the shrimp with spices. Your choice. If using cooked shrimp and if it has tails, pull the tail out and chop them coarsely.Transfer in a bowl. Add 2 tsp kewpie mayo (regular mayo will do too), 2 tsp sriracha, a tsp of sesame oil, 2 tsp chopped green onion, 2 tsp chopped cilantro and mix, since the cocktail shrimp had some salt in it, I didn’t add any extra

    Step 4- heat ¼ cup oil on med hi heat.Ready a plate with paper towel. Do a wooden chopstick test for temperature. If the oil bubbles around the chopstick, its hot. Once hot drop the rice paper triangle. It will pop into a beautiful shape immediately, and lift So basically drop and lift, that’s how quickly these rice paper triangles will pop.

    Step 5- Set the rice paper taco’s for assembly. First the guacamole. Then the shrimp mix and enjoy !!

I love cooking because its fun. It’s a way to express myself. Its an universal language which everyone understands. Cooking is an art where a doodle can be delicious. There’s such a large spectrum of experimentation, the possibilities are endless and the outcome is edible which is fantastic. Any process which involves all our 5 senses for gratification is bound to deliver joy and pleasure. Food is something to be shared. There is no right or wrong in cooking as long as its delicious. Cooking doesn’t have to be hard. It should be a mix of tradition, convenience and mostly indulgence. And it also should be about what works for you. Its all about experiencing the flavors of the world and enjoying it. It’s a continuous learning process which is never ending but its fun and fulfilling. Cooking is food for my soul. It gives me an opportunity to nurture my family and friends, express my love and care for them.
