Oats and Chicken Porridge

This is simple Oats and Chicken Porridge cooked on low heat. The secret of this recipe is in cooking it long enough for the meat to become very tender and for the Oats to become somewhat disintegrated and smooth that just melts in your mouth. Both Lamb and Chicken can be used for this. Here in this one, I have used Chicken in this for a lovely change. It's comfort food by all means. A piping hot bowl of this is just what you need to pep you up. It makes you feel so full and energized. Basically, this one is a must-have one on all the fasting days of Ramadan. A very delicious and healthy one to be eaten after a whole day of fasting especially in Summers when you are completely drained.

In a wide and deep cooking pot, heat a tablespoon of butter and saute the Onions and Garlic for at least 2 minutes.

Add the rest of the ingredients now including water. Half cover it with a lid keeping a ladle inside and let it simmer on low heat for at least an hour or until the meat becomes tender and the Soup gets thicker. The more the amount of Oats added, the thicker the Soup or Porridge will get. So add it according to your choice. If you do so, then increase the amount of water and the other ingredients too. See to it that it is simmered on low heat. Oats render the thickness to it.

Keep stirring it at regular intervals to avoid it from burning or sticking to the bottom. Adjust salt and Pepper according to taste. Serve it piping hot garnished with freshly chopped Coriander Leaves. And do not cover this Soup fully with a lid because it might spill a lot and make your job a lot messy. Remember this important tip always. It is highly recommended by me.

This Porridge contains the richness of Meat and the lightness of Oats. It is nutritious too. The slow cooking method renders it a much-needed aroma. The slow cooking method is the best for this and it's absolutely flavourful and yummy. Enjoy!
