Wash & soak Foxtail millet for 2- 3 hours. Pressure cook it with 3 cups of water, for 1 whistle on high flame. Simmer for 8 minutes. Once the pressure subsides, open & mash it well. Add a pinch of salt and Cardamom. Add jaggery & Brown Sugar. Adjust sweet to your taste. Mix well. Add a tbsp of ghee. Mix till the jaggery dissolves and it becomes thick.

To a pan, add a tbsp of ghee. Fry the Cashew nuts, Almonds & raisins. Finally add to the pongal. Serve hot / chilled.

Notes:
¤ For sweetness, you can either use only jaggery or only Brown Sugar.
¤ I have made this recipe without using moong dal. You can add it if u prefer.
¤ This recipe will go good for 2-3 days (refrigerated)
¤ Adding any kind of dry fruits depends on your choice.
¤ Colour of the pongal depends on the quality and colour of the jaggery.
¤ Adjust amount of jaggery and ghee to suit your taste. - 4
