Roughly chop the almonds in a food processor. Add 3 tablespoons sugar and the cinnamon, then mix well.

Melt the margarine. Take one sheet of phyllo dough, brush it all over with melted margarine, and fold it in half. Brush again with margarine and spread a line of the almond mixture along the length of the sheet.

Carefully roll it up into a log.

Place the roll in a greased baking dish, arranging it in a spiral shape. Repeat the process until the dish is full. Pour the remaining melted margarine over the top.

Bake in a preheated oven at 340°F (170°C) for 25–30 minutes. Let it turn golden brown and crispy.

While it bakes, prepare the syrup and let it cool. Combine the water, sugar, and cinnamon stick in a saucepan over medium heat and bring to a boil. Add the honey or glucose/corn syrup and simmer on low for another 5 minutes. Let the syrup cool completely.

Once the baklava is baked, let it rest for 5 minutes, then pour the cooled syrup over it. It may seem like a lot, but the baklava will absorb it!
