This dessert is very special dessert, made by my mother on special occasions like Holi. It's called kesari because of the bright yellow colour came from saffrons/kesar used in making this recipe. The taste is super delicious.

This dessert is very special dessert, made by my mother on special occasions like Holi. It's called kesari because of the bright yellow colour came from saffrons/kesar used in making this recipe. The taste is super delicious.
Steps

Roast the sooji medium to low heat for 4 to 5 minutes. The colour change to light golden brown.

Add a cup of water and sugar, stir continuously.

When semolina starts thickening, add another cup water, saffron strands with water. Cook on low heat till the water absorbed and semolina leaves the sides of pan.

Then add cardamom powder, mix well.
Transfer to a plate and serve hot with garnish of chopped almonds.
