Steps

Clean the aubergine before cut into slices, sprinkle some sugar, salt, turmeric and chilli powder leave aside to release extra water

Make a flour mixture with rice flour, salt, chilli powder and turmeric powder,i added some curry powder as well but it is optional
- 3
Dry the aubergine slices with a tissue paper then coat with flour mixture, shallow fry them until crispy on both side
