A simple and quick dessert, perfect for finishing off lunch or dinner, or just to treat yourself to something sweet. I used amaretti cookies, but you can choose any type of cookie you like.

A simple and quick dessert, perfect for finishing off lunch or dinner, or just to treat yourself to something sweet. I used amaretti cookies, but you can choose any type of cookie you like.

Start by making a classic pastry cream. Separate the egg yolks from the whites. Whisk the yolks with the sugar until light and fluffy, then add the sifted flour.

Heat the milk with the vanilla bean seeds. Add it to the egg mixture and whisk well to avoid lumps. Return the mixture to the heat and cook for a few more minutes, stirring, until it thickens completely.

Remove from heat and transfer the cream to a glass bowl to stop the cooking. Let it cool completely.

Roughly crush the amaretti cookies in a bag using a rolling pin.

Now assemble the dessert cups by layering the crushed amaretti and the pastry cream, finishing with a few drops of hazelnut spread. Chill in the refrigerator for at least an hour before serving.
