This is how my Filipina mother makes bitter melon, delicious. It has salted shrimp paste (bagoong) but you can substitute fish sauce or just leave it out. Serve with rice! And fish!

This is how my Filipina mother makes bitter melon, delicious. It has salted shrimp paste (bagoong) but you can substitute fish sauce or just leave it out. Serve with rice! And fish!

Ingredients

4 servings
  1. 1-2 Tbspolive oil or vegetable oil
  2. 1/2small onion, sliced
  3. 3garlic cloves, minced
  4. 1/2medium tomato, diced
  5. 2bitter melons, sliced (to prepare, cut in half lengthwise, remove seeds, slice into half moons)
  6. Water or stock (if using stock, be mindful of salt)
  7. 1 Tbspsoy sauce (to taste)
  8. 1 Tbspsalted shrimp paste (bagoong) or fish sauce -- optional
  9. 1egg, beaten
  10. NOTE: soy sauce, shrimp paste and fish sauce are all salty. Adjust amounts to your liking

Cooking Instructions

    Heat oil in medium pot, saute onions for a few minutes.

    Add garlic and cook for another minute.

  3. 3

    Add bitter melon and tomato and soy sauce, mix well. Cook for a few minutes, stirring often.

    Add water or stock to almost cover (about 2/3 covered)

  5. 5

    Bring to a gentle boil, turn down heat and partially cover.

  6. 6

    Simmer until tender (about 15-20 minutes) stirring occasionally.

    Add beaten egg and stir well until egg is scrambled.

  8. 8

    Add salted shrimp paste or fish sauce if using. Mix well.

  9. 9

    Serve with rice! Delicious with fish and rice.
