Bitter Melon (Ampalaya)

This is how my Filipina mother makes bitter melon, delicious. It has salted shrimp paste (bagoong) but you can substitute fish sauce or just leave it out. Serve with rice! And fish!

This is how my Filipina mother makes bitter melon, delicious. It has salted shrimp paste (bagoong) but you can substitute fish sauce or just leave it out. Serve with rice! And fish!
Cooking Instructions

Heat oil in medium pot, saute onions for a few minutes.

Add garlic and cook for another minute.

Add bitter melon and tomato and soy sauce, mix well. Cook for a few minutes, stirring often.

Add water or stock to almost cover (about 2/3 covered)

Bring to a gentle boil, turn down heat and partially cover.

Simmer until tender (about 15-20 minutes) stirring occasionally.

Add beaten egg and stir well until egg is scrambled.

Add salted shrimp paste or fish sauce if using. Mix well.

Serve with rice! Delicious with fish and rice.
