Parmesan Crusted Chicken Breasts

These crispy golden, herby, garlicky chicken breasts are so delicious and very versatile. Great served up with an array of different sides such as creamy mashed potatoes, fries or placed on top of some lovely pasta. Here I've served them on some arrabbiata chilli linguine.

Preheat your oven to 180 (fan). Line a baking tray with foil. Heat a heavy based non-stick frying pan up over a medium heat and drizzle in some olive oil to coat the base.

On a dinner plate add the breadcrumbs, garlic powder, grated parmesan cheese, plus the herbs and season well with salt and pepper. Mix together.

Take the chicken breasts and coat well in the breadcrumbs. Fry the coated chicken for around five minutes until golden all over then transfer to the lined baking tray.

Bake the coated chicken in the oven for 15-20 minutes until cooked right the way through. Remove from the oven and leave to rest for a couple of minutes. Serve up and scatter over a few parsley leaves and place a wedge of lemon on the side. Enjoy! :)
