Ingredients

  1. Salad
  2. 1red bell pepper, chopped
  3. 3 stalkscelery, chopped
  4. 1English cucumber-seeds removed, chopped
  5. 1/2red onion, chopped
  6. 1/2 cupItalian parsley, chopped
  7. 1 canwhite beans, rinsed
  8. 1 canGarbanzo beanie, rinsed
  9. 1 cankidney beans, rinsed
  10. optional 1 jalapeño, seeded & diced
  11. Dressing
  12. 1/4 cupextra Virgin olive oil
  13. 1/4 cupred wine vinegar
  14. 3-4 TBSfresh lemon juice
  15. 1 clovegarlic, minced
  16. 1 TBSDijon mustard
  17. 1/2 tspsalt
  18. 1/2 tsppepper
  19. 1-2 tspraw honey

Cooking Instructions

    Add chopped veggies and beans in a large bowl.

    Add all dressing ingredients to a mason jar and shake to combine. Add to salad and mix.

    Serve with pita chips, in a wrap with some chicken or on top of a salad.
