Slice the bread into pieces about 3/4 inch thick.

In a pot, combine the milk, cinnamon stick, lemon peel, orange peel, and 1 cup sugar (200 grams).

Heat the milk mixture until it comes to a boil. This is important so the torrijas last longer and soak up the milk faster.

Soak the bread slices in the hot milk, then let them drain in a colander, saving any milk that drips off.

In a separate bowl, beat the eggs. Heat the oil in a frying pan. Prepare a plate with a mixture of sugar and ground cinnamon, and another plate lined with paper towels.

When the oil is hot, dip the soaked bread slices in the beaten eggs and fry them. Place them on the paper towels to drain, then coat them in the cinnamon-sugar mixture.

With the leftover milk and any remaining sugar from coating, make a syrup and pour it over the torrijas.
