Ingredients

6 servings
  1. 1 1/8 lbsdried beans, soaked overnight (about 500 grams)
  2. 1 1/8 lbsMexican chorizo or pork sausage (about 500 grams)
  3. 3smoked pork chops, chopped
  4. 4pork hot dogs
  5. 1/4 cupfinely chopped onion, plus another 1/4 cup
  6. 1/3 cupchopped cilantro, washed
  7. Salt, to taste
  8. 8.8 ozpork cracklings, broken into pieces (about 250 grams)
  9. 1-2chipotle peppers
  10. as neededWater,
  11. Salt, to taste

Steps

  1. 1

    Rinse the beans thoroughly and place them in a pressure cooker, covered with water. Cook for about 30 minutes after sealing.

  2. 2

    In another pot, cook the chopped chorizo, pork chops, and hot dogs until browned. Once they start to brown, add the onion.

  3. 3

    When you can open the pressure cooker, add the beans with their broth, crumbled chipotle peppers, and salt to the pot. Simmer until the meat is tender.

  4. 4

    Serve topped with chopped onion, cilantro, and pork cracklings.
