A yummy sandwich made up from homemade Chena, a wonderful summer delight and an excellent tea time accompaniment.
Steps

Curdle milk either with lemons juice or vinegar, then strain Chena from green water and keep in strainer for 30 minutes to drain excess water. Then crumble and keep aside.

Assemble all other ingredients, cut potatoes is small small pieces and keep aside.

In heated pan add oil, add cumin seeds and allow to crackle then add potato + green chilli and sauté for 2 minutes under medium flame.

Then add crumbled Chena and sauté for 1 minute.

Then add all spices except Garam Masala and stir fry for 3-4 minutes.

Now add garam masala, sprinkle little water and sauté for 2 -3 minutes.

Now filling is ready and let it cool. Discard green chilli.

Take bread slices, apply butter on any one side of each slice, spread a medium layer of filling on bread slice keeping butter side outwards, then place / cover with another bread slice keeping buttered side outward.

Toast in sandwich maker which takes just few minutes, alternatively it can be toasted on tawa also.
Cut diagonally and sandwich is ready to serve. - 10
Serve with tomato sauce and enjoy.

Pair with tea / coffee.
