I made this as a side dish for my Easter Dinner this weekend. This would be a great dish to serve on St. Patrick's Day cause of the green color 😊

I made this as a side dish for my Easter Dinner this weekend. This would be a great dish to serve on St. Patrick's Day cause of the green color 😊

In a large pot add the diced potatoes. Fill pot with water covering potatoes completely. Bring to a boil on high heat. Once boiling add a teaspoon of salt. Turn heat down to medium low and let simmer til potatoes are fork tender. Drain water from pot and add potatoes back to the pot.

Add rest of ingredients and mash with a potato masher or fork til creamy or til desired consistency. Season to taste with salt and pepper and garnish with minced parsley then serve immediately and Enjoy 😋.

**Note***
For a more brighter and vivid green color add bout 2-3 drops of food coloring to mashed potatoes and stir completely til well combined then serve like usual.
