  1. 4 largeIdaho potatoes; peeled and diced
  2. 2 tbsprosemary; minced
  3. 1 tbspsage; minced
  4. 1 tspthyme; minced
  5. 1 tbspparsley; minced
  6. 4 clovegarlic; peeled
  7. 1 1/2 stickbutter; cubed
  8. 2/3 cupparmesan cheese; grated
  9. 1/2 cupheavy cream
  10. 1 largedollop of sour cream
  11. 1salt and pepper

  1. 1

    Cover potatoes and garlic with cold water. Add a pinch of salt. Boil until potatoes are fork tender. Drain.

  2. 2

    Return to burner on high heat for approximately 30 seconds to remove excess moisture. Add butter, cream, herbs, sour cream, and cheese. Thoroughly incorporate. Season.

  3. 3

    Use the parsley to garnish.
