Ingredients

  1. 12 piecespork spare ribs
  2. 2 cupswater (500 ml)
  3. 1 tablespoonminced garlic
  4. 1 tablespoonSouthern yellow curry paste
  5. 1 tablespoonred curry paste
  6. 1 tablespoongranulated sugar
  7. 1 teaspoonfish sauce
  8. 1/2 teaspoonblack pepper
  9. 8red Thai chilies, chopped
  10. 8kaffir lime leaves, sliced

    Start by boiling the pork ribs in water to make them tender and soft, so you won't need to stir-fry them for long. Boil for 15 minutes, skimming off any foam that rises to the top. Once the ribs are tender, drain most of the water, leaving about 1/3 cup (2 ladles) to use as pork broth for stir-frying the curry paste. (No oil is used in this recipe.)

    Turn the heat to high. Add the minced garlic, Southern yellow curry paste, and red curry paste to the pan with the pork ribs. While stir-frying, add the sugar, fish sauce, and black pepper (use the amounts listed above).

    Finally, add the chopped red Thai chilies and sliced kaffir lime leaves. Stir-fry until the broth has evaporated. That's it—serve hot and enjoy!
