Steps

Prepare sugar syrup by adding water + sugar, let sugar dissolve, add cardamom pods and boil for 6-7 minutes. We need a thin syrup….. one string consistency.

Soak Urad Dal for 6-7 hours, grind into a smooth paste by adding very less water. Add salt and whisk for 3-4 minutes. Lastly add baking soda and give a gentle mix.
We need almost Idli batter type consistency but fluffy. - 3
Take Appe pan, grease oil and pour 1 heaped tbsp batter in each mould, cover and cook for 3-4 minutes.

Flip other side and cook for 2-3 minutes.

Then transfer balls into sugar syrup and cook for 5-6 minutes.

After cooking the balls plumps up.

In pan add milk + sugar + cardamom and simmer under low to medium flame for 12 - 14 minutes. Lastly add chopped cashews.

Semi thickened milk / Malai is ready.

Transfer thickened milk into the balls + sugar syrup mixture.

Keep balls in the mixture and refrigerate for 3-4 hours and balls will plump and turn soft. Discard cardamom pods.

Dessert is ready to serve.
