Ingredients: 2 cups flour; 2 tbsp sugar; 1 tsp salt; 2 tbsp oil; 2 cups water; 2 cups Cooked potatoes; cube Seasoning; Cumin; Coriander; Paprika; Ginger/garlic paste; Black pepper; Curry; Parsley; Green pepper; Scotch bonnet; Mozzarella cheese

I made potato quesadilla using homemade batter tortilla wrap. If you want you can use store bought or dough made tortilla wrap, I have the recipe on my page so do check it out

Makes 8 quesadilla

For the batter
2 cupsflour
2 tbspsugar
1 tspsalt
2 tbspoil
2 cupswater
For the filling
2 cupsCooked potatoes
cubeSeasoning
Cumin
Coriander
Paprika
Ginger/garlic paste
Black pepper
Curry
Parsley
Green pepper
Scotch bonnet
Mozzarella cheese

Mix all ingredients for the batter. Add oil in a pan and pour the batter then fry flipping each side until it’s done

Mashed potatoes and add parsley, scotch bonnet, green pepper and spices and seasoning cube. Mix everything together until combined

Add filling to wrap and put cheese then cover and heat on a pan so cheese melts for 2 mins. Serve and enjoy😋
