Pimento Roasted Lamb
Borrego a alentejana
Steps
- 1
Try to get a peice of lamb shoulder that has a bone in it as it'll add to the flavour of the meat while cooking. Slit the lamb a few times on each side. You can use a leg of lamb
- 2
Place the lamb in an oven proof dish. Use one that has a lid on it.
- 3
Mix the rest of the ingredients in a small bowl, and then add it to the lamb, ensure the meat is well coated throughout.
- 4
Place the lamb in the fridge overnight to marinade.
- 5
Peel and cut the potatoes and onions in quarters and add them to the oven proof dish. While cooking the potatoes will absorb the marinade and flavour of the meat.
- 6
When your ready to cook. Turn the oven to 180 c.
- 7
Slow cook in the oven for about 160-180c for 1.30 hours to 2hrs
