Left-over Salad Lunch

On January 1st a couple years back I stood on the scales which went up to 111 Kg. That's 17st 6 in feet and inches. Something had to give. Well after a bit of a struggle I am a little slimmer. Around 95Kg not exactly skinny but feeling better.
One of the tools I used for this was not to have a sandwich and a bag of crisps for lunch. Salads seemed like a good idea but they are BORING!!!
Well they don't have to be. I prepare a sald when I get up or just before I go to bed and it gives me something to look forward to

Ingredients

  • The ingredients are really whatever you want its a good idea to have some basics to start with for me these are
  • Lettuce
  • Tomato
  • Cucumber
  • Spring Onion
  • This recipe uses the left-overs from my Almost Jerk Chicken. You can use whatever you have in the fridge
  • Homemade salad dressing
  • Exciting stuff for flavour like gherkins, pickled chili, chili flakes, spicy olives or maybe garlic cloves in olive oil

Steps

    Instead of putting a sandwhich in the sandwich box out a couple of spoonfuls of last night's dinner in one side then fill the rest of the box with lovely chopped salad. I like the little cherry tomatos, they are lovely and sweet. OK they are a bit expensive but its better to make something nice that you will eat thanenjoy eating than something nasty that you wont.

    Your mission is now to make this into something that is going to be nice rather than boring. Build up a stock of things that you like. I get tubs of spicy olives and sun dried tomatoes from the supermarket. The Chinese supermarket is a great place to go to buy pickled chillies. Sometimes I even sprinkle chilli flakes on as well. This one has spicy olives, beetroot & a chilli.

    I make my own salad dressing with all kinds of good stuff in it. Pour a bit of this into a little pot and put that in with the salad. Its a delicious alternative to a sandwich and it has helped me to slim down.

I love to cook. I have been cooking since I can remember and like to create dishes that are just a bit different.I am also a bit of a cheat. I like authentic flavours but if I am cooking for a dinner party I want to spend time with my guests rather than slaving away in the kitchen while they are drinking wine at the table.I like to think that my recipes are quick and relatively easy.I try to keep fat and salt to a minimum and use Olive or Rapeseed oil as somebody told me that it was healthy.I almost never cook with salt. My blood pressure is borderline and I am told that too much salt isn't good for you.Sugar is my biggest wind up! I like sugar in sweet things like cake and ice cream but why do they have to put it in Gravy?I check the ingredients of everything I buy and if a savoury product lists sugar on the ingredients then it goes back on the shelf.
