Easy tomato sauce

An amazing pasta sauce, a recipe of my father, which we absolutely love. If there is any left over you can add it to any dish that you use with tomato sauce. It is also goes amazingly with fried eggplants.

An amazing pasta sauce, a recipe of my father, which we absolutely love. If there is any left over you can add it to any dish that you use with tomato sauce. It is also goes amazingly with fried eggplants.

Blend the tomatoes in a food processor. I usually buy the brand that comes with onion included but you can get plain diced tomatoes and add a small onion or just avoid it completely. Place the blended tomatoes in a medium-sized pot, over moderate heat.

When the sauce starts to boil add the salt (I usually use about 1 tbsp but you can use less or more, depending on your taste) and the restthe garlic, the pepper, the green pepper, the spearmint, the oregano and the basil. (Concerning the last 3 ingredients, I just take a small quantity with my fingers from the jars that I keep them in).

Let the sauce boil until it thickens, then add the oil, about 2-3 tbsp and it is ready to serve!
