Cooking Instructions

Slice the red onion and garlic cloves, then add to an oven dish with the cherry tomatoes and drizzle with 1/2 tbsp olive oil. Put in the oven at 200C for 20 mins

Cut your cod loin into two nice chunks and set to one side and carefully open the Parma ham.

Next lay out 3 slices of the ham on a chopping board, and spread a dollop of the green pesto in the middle. Place one of the cod loin chunks on top of that, then top it with a bit more pesto as shown in the photos.

Now the fun part, we’re going to wrap these up like presents working anti-clockwise from the top as shown here

Now do the same with the other piece of cod and you should end up with two nicely wrapped parcels. Oil a baking tray and put them in the oven for 20 minutes

Plate up the vegetables and slice the cod parcels in two and serve with fresh ground pepper to taste!

I thought this would be fun and whimsical to change from the norm. I added a small amount of shallot and different cheeses to further have fun and flavor in a traditional recipe.
