SAUCE BASE:
Chop red and green capsicum into roughly 1-2 inch pieces and place on a lined baking sheet and spray with some oil. add to oven and cook on 180°C until charred. Allow to cool and add to blender with tomato puree and can of chipotle. Be sure to check though chipotle in case some stem bitS have been left attached to chipotles. I usually tip them on my mince after it has cooked and sort through them and add them to blender. Blend to a sauce. - 2
Set slow cooker to high and add sauce to dish. Add in remaining whole spices, 1 cinnamon stick and 2 black cardamom pods. Add in powdered spices 1/2 tbsp of coriander powder, cumin, turmeric and paprika. Stir until powdered spices are well combined into the sauce.

MEAT BASE:
Add 2 tbsp of ghee to large fry pan. Once hot add 1 tsp cumin seed and allow to fry for 30 sec. Add finely diced onion and soften for approx 3 mins (don't brown them!). Add minced garlic and ginger and cook for 1 minute. Add mince and cook. Once the meat begins to release some moisture add in old el paso fajita spice packets. Finish cooking mince. Please don't over cook it and dry it out. - 4
Add our cooked meat base to slow cooker and mix well to combine with our sauce base. add in 1 tsp of msg or salt and 1 tsp of cracked pepper. Leave on high setting.

CHILLI:
So while the slow cooker is heating up with our sauce and meat base start prepping the remaining ingredients. Cut up 2 green capsicums into 1 inch strips. Cut up red chilies into circles. - 6
Drain 2 cans of kidney beans and rinse under cool water. Drain corn spears and cut into approx 5 pieces per spear. Cut chorizo in half length ways and then slice into semi circles.

Once slow cooker is hot reduce temp down to low. Add in chorizo pieces and combine. Adding ingredient will cool down the chill so don't add everything at once.

Space apart adding remaining ingredients by about 30 mins each. Add in kidney beans. Next add sliced corn spears. Lastly add in capsicum pieces. Cook for 1 hour.

Crush 1 tbsp of kasoori methi in your palm using your thumb over the chilli. Now add our 20g of chocolate and stir through until combined well and cook for 30 mins.
