Couple times a year dad would cook a big spiral ham and have the family over for a big dinner. This is what we would do with the leftover ham.
Note: this recipe fills an 8 quart pot to the rim. Also this recipe is easily cut in half if desired.

Ingredients

8 quarts
  1. 4 lbsHam, cubed
  2. 1 package15 bean soup
  3. 2-14 ozcans whole kernel corn
  4. 2-14 ozcans mushrooms or 2 cups fresh sliced
  5. 2-14 ozcans fire roasted diced tomatoes
  6. 2 cupscarrots, sliced
  7. 2 cupscelery, sliced
  8. 1large white onion, diced
  9. 2 packetsMccormick Beef stew seasoning

Cooking Instructions

    PRIOR TO COOKING. Place dried beans into the pot with at least 2 quarts of water and allow to soak for at least 2 hours before beginning the rest of the recipe.
    After the beans have finished soaking, drain and wash the beans and place them back into the pot with 3 quarts of fresh water. (Note: there may be a flavoring packet in the bean package. This will not be needed and can be thrown away.)

    Drain the cans of corn and mushrooms and add them to the pot. Prepare all other ingredients and add them to the pot as well.

    Fill the remaining available room in the pot with water and stir the pot to mix up the ingredients. Then set pot onto stove and set to high. Once the pot starts to boil, turn temp down to a simmer and leave at that temp for about an hour.

    After that the soup will be ready to serve and eat. Enjoy
