This recipe was inspired by my son who doesn't like eating meat or vegetables, a great way to hide both while offering a simple, delicious meal packed with essential minerals and protein

Cut the plantain and sweet potato into small pieces (or use a food processor if you have one)
- 2
Chop up the omena into small pieces too, fired omena is readily available in most supermarkets

Saute the onions till they soften(don't brown). Once translucent, add the grated brocolli stem
Note: Brocolli stems contain more calcium, iron and vitamin C compared to the florets - 4
Once the sautéed brocolli has cooled, mix it with the sweet potato, plantain and omena. Make into round, flat patties, size of your palm and refrigerate for 30 minutes. It should produce 6- 8 patties

Heat cast iron pan on low heat. Beat the egg and set breadcrumbs on a flat plate. Then dip the patties one by one into the egg, then coat both sides with breadcrumbs.

Increase heat of pan to medium and fry the fish cakes on both sides till golden brown. Once done, put on a plate line with kitchen tissue to absorb excess oil.

Serve with Ketchup or dip of your choice
