Boil the pasta according to packet instructions in salted water

Chop the bacon into lardons, slice the garlic and grate the courgette.

Add a drizzle of oil to a frying pan and place over a medium heat. Add the bacon and fry for 2-3 minutes, then add the garlic, cook for a minute followed by the courgette. Stir, season and cook until the courgette has wilted

Real the egg into a bowl, whisk and add 20g of finely grated parmesan

Drain the pasta, retaining 50 ml of cooking water. Add the pasta to the frying pan and stir with the ingredients. Remove from the heat, add the egg mixture and stir well for a minute, add the cooking water and stir again.

Season, serve and finish with some extra Parmesan
