No-Churn Pistachio Ice Cream

No ice cream machine, no problem!

Ingredients

  1. Pistachio Paste
  2. 200 gshelled pistachios
  3. hot water
  4. Ice Cream
  5. 1 cansweetened condensed milk
  6. 4 tbsppistachio paste
  7. 1 tbspvanilla extract
  8. 1/4 tspground cinnamon
  9. 1/2 tspsalt
  10. 5 dropsgreen food colouring
  11. 480 mldouble cream
  12. Optional - pistachios to top

Cooking Instructions

  1. 1

    Soak pistachios in a bowl of boiling water covered with a kitchen towel for 15 minutes

    Drain the water and then rub the pistachios between your fingers to remove the purple skins

  3. 3

    Blend pistachios in a food processor until they develop into a paste

  4. 4

    Whisk together the condensed milk, pistachio paste, vanilla, cinnamon, salt and food colouring

  5. 5

    In a separate bowl whip the cream to stiff peaks

  6. 6

    Using a rubber spatula fold the condensed milk mixture into the whipped cream

  7. 7

    Transfer to a loaf pan and sprinkle with pistachios

  8. 8

    Cover with cling film and freeze, scoop and serve the next day!
