The irreplaceable components of this recipe are;
Greek yogurt, onion, lemon juice and olive oil.
The rest is up to you. - 2
I take a cup of water and place it in a pot, there I add my seasonings and olive oil.
I used: 1gr saffron, 1tsp paprika, 2tblsp Madras curry seasoning, fennel seeds, 1tsp MSG, 2 bay leaves, 1tsp brown sugar.
I think a good amount of salt for the marinade is approx 1.5 to 2 teaspoons of salt. Remember, this is for the liquid marinade so it has to be a little saltier.
Let all the seasonings simmer for 5-10 mins so it releases all their beautiful flavours.

After they're done simmering you can wait till the mixture cools down or just add a little bit of ice.
It's important not to drop the rest of the ingredients (lemon and yogurt) in the hot mixture so it doesn't lose its tenderising qualities.
Once decently cooled down, add the yogurt and lemon juice, mix well. - 4
Thinly cut red onion root to stem. Also crush in garlic. Add them in to the liquid mixture and let sit for a few minutes. Whilst you prep the chicken.

With a sharp knife carefully cut deep slits all around the chicken. This helps to tenderise, flavour and evenly cook the chicken.

Take some of the onions and place it as a bed in your marinading dish. Place the chicken skin side down and pour all the marinade mixture on top till the chicken is submerged. Of mixture is too thick you can add a splash of sparkling water.

Cover the dish, and place in the fridge to marinate over night or at least 8 hrs.

The next day, take the chicken out of the fridge a good 2 hours prior to cooking so it comes to room temperature.

I dice loads of veggies on a baking tray and pre cook them for 30 mins in the oven.

Then place the chicken with the skin side up on top of the veggies and make sure to get every last piece of that onion. Stuff some of the onion in the cuts.
This onion will become the crispiest, most flavourful thing. It'll be your new favourite snack.
You can drizzle some of the marinade juice on top of everything for extra flavour. - 11
Pre heat your oven to 220c. And place the tray in the middle.
Cook the chicken for 45 mins until all the skin is deliciously brown and the onions are crispy. - 12
Take out the chicken when it's done and let it sit for 10 mins on the counter before serving.
