Simple quick biscuit recipe you can modify for different flavours such as almond or lemon.

Mix your softened butter and sugar together until light and fluffy. You could add some flavouring here if you like, such as vanilla or lemon. I really like to add some almond extract.

Add your flour a little at a time mixing into a dough

Form your dough into a ball and chill in the fridge for half an hour.

Split your dough into equal parts, you can do this roughly. Form into small balls and place on a lined baking tray. You can use a fork dipped in water to flatten and shape your biscuits but I just use my hand to pat them flat.

Bake in the oven for roughly 15-20 minutes at 150 depending on your oven. You are looking for a pale golden colour.

Place on a cooling rack to cool. You may also want to drizzle with icing or chocolate, whatever you like 😁
