Stuffing bitter melon into tofu skin rolls is a surprisingly great combination. The mild flavor of tofu skin balances the bitterness of the melon, while five-spice powder and soy sauce add extra depth. This light and refreshing dish is perfect for hot summer days.

Soak the dried tofu skin in water until soft, then drain. In a shallow dish, mix together the soy sauce, dark soy sauce, black pepper, and five-spice powder. Marinate the softened tofu skin in this mixture for 10 minutes.

Cut the bitter melon in half lengthwise, remove the seeds, and slice into thick strips. Tear the king oyster mushroom into pieces by hand.

Spread the bitter melon and mushroom from step 2 onto the marinated tofu skin from step 1. Sprinkle with sliced chili pepper. Roll up tightly and tie with kitchen twine. Arrange on a heatproof plate.

Place the rolls in a pressure cooker and steam over water for 10 minutes under pressure. Turn off the heat and let the pressure release naturally. Let cool, remove the twine, and slice into 3/4-inch (2cm) thick pieces to serve.
