Spinach ricotta chicken

Cut chicken breasts to slices and tender them. Add a little olive oil on the bottom of glass baking pan and add chicken slices. Add spices and pressed garlic on top.

Chop fresh spinach or use frozen pre-cut and cook it with some olive oil, salt and pepper for few minutes. Let it cool a bit and add ricotta cheese, mix well.

Cover chicken breasts with the mixture and bake for 25-30 minutes at 180°C. After 15 minutes of baking add grated parmesan at top.

Meanwhile cook the side dish, we cooked potato puree. We did it in our soupmaker (as it’s one of the options). You can also peel, chop and cook potatoes in a classic pot and then smash it or blend it.
