Recipe developed from loosely following the Trader Joe's lasagna recipe on the noodle box to use up an insane amount of smoked pork shoulder because we were tired of pork tacos. Pork with bbq seasoning but no bbq sauce is best, though I've also used left over restaurant bbq pork that's pretty saucy and it's just as good. Also, subbing cream cheese for mascarpone has worked in a pinch.

Ingredients

  1. 1 lbsmoked pork
  2. 24 ozmarinara sauce
  3. No boil lasagna noodles
  4. 12 ozmascarpone cheese
  5. 2 cupsQuattro formagio (Trader Joe's)
  6. 1/2 cupmilk

  1. 1

    With mixer, blend 1 1/2 cups shredded cheese, mascarpone cheese, and milk. Dip and coat noodles.

  2. 2

    Heat meat and red sauce in large sauce pan.

  3. 3

    Layer cheese goo covered noodles, pork and sauce, sprinkle lightly with cheese, repeat a couple times.

  4. 4

    Top with the extra mascarpone mixture and sprinkle any remaining cheese.

  5. 5

    Let rest for 30 to allow noodles to absorb liquid (I usually skip this part).

  6. 6

    Cook 375 for 40 minutes.
