Steps
- 1
Place the cashews in a blender or food processor and pulse until you get a fine powder.
- 2
In a saucepan, add the sugar and water. Cook to make a one-string consistency syrup.
- 3
Add the cashew powder to the syrup and cook on low heat, stirring continuously.
- 4
Add the ghee and cardamom powder. Mix well and cook until the mixture starts to leave the sides of the pan.
- 5
Transfer the mixture to a greased plate. Mix with a spoon, and when it cools slightly, grease your hands with a little ghee and shape the mixture into a ball.
- 6
Grease a piece of parchment paper with ghee, place the ball on it, cover with another piece of parchment paper, and roll it out with a rolling pin. Cut into diamond shapes with a knife.
- 7
Your Kaju Katli is ready!
