Make the chili oil (using B ingredients):
Crush the roasted peanuts. - 2
1. Over medium-low heat, cook the oil, onion, scallion, and ginger until browned.
2. Lower the heat to keep the oil warm. - 3
1. Add 3 teaspoons smoked paprika and 1/2 teaspoon shichimi togarashi.
2. Pour in 2 tablespoons hot oil and mix well. - 4
1. Add sugar, the remaining 3 teaspoons smoked paprika, white sesame seeds, crushed peanuts, and five-spice powder.
2. Add another 2-3 tablespoons hot oil and mix well.
3. Add cooked soy sauce, then the remaining hot oil, and mix well. - 5
At the same time, make the beef sauce (using C ingredients):
1. Over medium heat, add some avocado oil and briefly sauté the minced ginger and dried chili pepper.
2. Add the preserved mustard greens and cook until the moisture is gone (rinse the mustard greens first to remove any sand). - 6
1. Add the ground beef and cook until dry. Add ground Sichuan peppercorns, 2-3 tablespoons sweet bean sauce, sugar, and soy sauce to taste (skip soy sauce if it's salty enough).

To assemble:
1. Cook the noodles.

Add the beef sauce, crushed peanuts, white sesame seeds, and cilantro in order.
