Finely dice the vegetables and add it to a bowl. Refrigerate for an hour. Add the dressing just an hour before serving. This dressing time imparts great flavor to this lovely colourful salad.

Mix lemon juice, olive oil, and vinegar. Add it to the salad. Season with salt and pepper and a sprinkling of chopped cilantro. Toss till dressing coats the salad. The salad should be crunchy and fresh. So add salt just before serving to retain crunchiness. Serve it within an hour after the dressing is added. Serve chilled with toasted Pita Bread or add to wraps, sandwiches, or along with falafel, kababs, grilled chicken, meat, fish, vegetables, koftas, or any rice preparation.
