Steps

1. Remove stems & wash spinach throughly under running water
2. Boil water with little salt & sugar then add spinach for a minute; strain it & refresh in chilled water this process is called "BLANCH" }
3. Squeeze out excess water & grind spinach into fine paste along with green chillies. - 2
4.Heat oil in a pan add chopped garlic & sauté for 1/2 minute then add dry red Kashmiri chili chopped onions sauté it for a minute
5. Now add spinach puree & add salt stir it; add water if required
6. When the gravy comes to a boil add paneer & mix well & check the seasoning
7. Add fresh cream & stir well
8. Garnish with ginger julienne & serve hot with choice of your bread - 3
To get best result do not overcook spinach; as overcooking would not only adversely affect the bright green color of spinach but also the taste
Palak Paneer tastes best without too many spices & herbs.
You can add little lemon juice also while having with choice of your bread.
