Wash Brinjals and Slit from between. Prep all veggies

For Stuffing: Take oil in a pan put 3 onions Diced, 8 garlic cloves, ginger, and grated fresh coconut saute it and then add peanut powder and Kanda lasun masala and mix well.

Add dry spices and mix well then grind it and make a thick paste.

Now Stuff Brinjals with masala. Take oil in a pan put zeera then add finely chopped onions and saute it for 5 minutes then add stuffed Brinjals and mix well.

Now add leftover stuffing and add water, cover it and cook on slow flame for 15 to 20 minutes till Brinjals are cooked properly and become soft.

Stuffed Brinjal is ready to serve with roti Paratha tastes best with rice roti.
