Ingredients

2 c
  1. 3 TbspEVOO
  2. 3 TbspAP Flour
  3. 1 TbspChili Powder
  4. 1 tspCumin Powder
  5. 1/2 tspGarlic Powder
  6. 1/4 tspDried Oregano
  7. 1/4 tspSalt
  8. 1/4 tspCinnamon
  9. 2 TbspTomato Paste
  10. 2 CChicken or Vegetable Stock
  11. 1 tspApple Cider Vinegar
  12. 1/4 tspBlack Pepper

Cooking Instructions

    Combine all dry ingredients into a small bowl and mix thoroughly.

    In a small pot, add the EVOO and heat until hot. Add the flour/spice mixture and whisk rapidly (make the spicy roux) for about 1 min, or until fragrant.

    Whisk in the tomato paste, then slowly add the stock. Continue whisking to remove any clumps in the mixture (5-7 min). The sauce will thicken, and thicken further upon cooling.

    Remove from heat and add the vinegar and black pepper.
