Peel the potatoes and wash very well. Dice in halves, pour in a pot and add water with pinch of salt.

Place the pot on heat and cook until tender but firm, about 15-20mins. Drain and leave it to cool for 3-5mins..

Place your pan or pot on medium heat. Add 1tbsp oil into the pot and heat. Add the potatoes and sprinkle the parsley flakes.

Stir fry for 2-3mins. Then turn off the heat.

Enjoy or serve with anything of your choice.
