Vegan Orange pie

This is one of the traditional Greek desserts. A sweet pie made with phyllo pastry, oranges and usually yogurt.
This though is a vegan variation, used during the lent period. It’s full of flavor and aroma and it’s even better than the other version!
Oranges are in season now and this is a perfect way to use them.

Steps

Take the phyllo sheets and make a roll with them. Cut small slices, so that you end up with thin long strips of phyllo. Separate them and let them to dry a bit.

In the meantime prepare the syrup. Put all ingredients in a saucepan and boil for 5 minutes. Take it off the heat and leave aside to cool

Put the one orange in a blender and pulse until it’s all a nice pulp.

Take a big bowl and put inside the sugar, orange juice, the pulp from the above step, the oil, baking soda and baking powder. Mix well to homogenize everything together.

Add the semolina, mixing while you do, so that you don’t get lumps.

Now you have to be careful. Start adding the phyllo strips. Make sure they are separated and that you mix with a fork during adding them. You don’t want to have a big lump of dough, you want each strip separated and covered with the mix.

Pour the mix in a greased pan (about 25x35cm) and let it sit for 10 minutes.

Preheat the oven to 170 Celsius and bake in the lower rack for 50-60 min, or until you see it has a nice color.

Take the pie out of the oven and while it’s hot pour the cold syrup so that it goes everywhere

Let the pie sit until all the syrup has been absorbed. Cut and serve!
