Corn nutrients and phytochemicals include vitamins (A, B, E, and K), minerals (Mg, P, and K), phenolic acids (ferulic acid, coumaric acid, and syringic acid), carotenoids and flavonoids (anthocyanins), and dietary fiber. This is the 4th "tonic" soup which is also very delicious and easy to make at home. The other tonic soups are apple pork ribs soup, lotus root pork ribs soup, and watercress pork ribs soup. You may substitute pork ribs with chicken. Enjoy! 🤤😋

Ingredients

  • 500 gpork ribs
  • 300 gcorn
  • 300 gcarrot
  • 9 slicesginger
  • 10 gdried red date slice
  • 10 gdried goji berries
  • 3 tablespoonscooking wine
  • 1.5 teaspoonsalt
  • 1200 mlwater (for parboil)
  • 1500 mlhot water (for soup)

    Remove the husk, silk and stem. Cut the kernel into small pieces. Be careful when cutting as it is tough.

    Cut the carrot into small pieces.

    Properly thaw if using frozen pork ribs. Rinse, drain and leave aside.

    Prepare the red date slice. May increase slightly more if you want extra sweetness.

    Prepare dried goji berries. Rinse once and leave aside.

    Prepare 9 slices of ginger.

    Put thawed pork ribs, 6 slices of ginger and 2 tablespoons of cooking wine into a pot of 1200ml water enough to cover the pork ribs while boiling. Turn on high heat and cover the pot.

    When the water starts to boil vigorously, remove the pork ribs and leave aside.

    Put the parboiled pork ribs, carrot, corn, red date slice, 1 tablespoon of cooking wine, and 3 slices of ginger into a pot of 1500ml hot water. Turn on high heat and cover the pot for 20 minutes. Then turn to low-medium heat to slow boil for another 40 minutes. You may have to replenish with some hot water as the corn absorbs water quickly.

    Add the goji berries and salt. Turn off the heat. Let it simmer for a while before serving.

    Ready to serve with cooked rice.

Love to cook and experiment with new cooking methods in addition to traditional stir fry recipes. Living in Singapore, a fantastic place to eat and experience (almost) every kind of cuisine in the world. There are 5 hawker center within my current neighborhood, I would go there for quick meal if I lazy to cook.
