Ingredients

  1. 220 gchicken breasts
  2. 1 tspminced garlic
  3. 40 gbasil leaves 2tbsp wine vinegar
  4. 30 mlextra-virgin olive oil
  5. Sea salt
  6. Freshly ground black pepper
  7. 220 gshredded lettuce
  8. 220 gfresh small mozzarella balls, drained
  9. 350 gcherry tomatoes, halved Fresh oregano to garnish

Cooking Instructions

    The vinaigrette – Place garlic, basil, and vinegar in a blender. With the motor running, slowing drizzle in 30ml of Olive oil until fully-blended.
    Season with salt and pepper and set aside.
    For The chicken – Brush 1tbsp of oil over each chicken breast and season with salt and pepper.
    Place a frying pan or griddle pan over medium-high heat and brush with remaining tablespoon oil. Sear each breast 2 minutes on each side.

    Lower heat to medium, cover, and continue to cook until chicken has cooked through.
    Transfer chicken to a cutting board and leave it to rest for about 5 minutes, then slice chicken into thin, long strips or both as I’ve done.
    Add lettuce into a bowl and top with mozzarella balls, halved cherry tomatoes, and chicken strips.
    Drizzle with vinaigrette and garnish with fresh oregano.
