Halve and slice the leek and place in a large frying pan over a low-medium with a drizzle of oil.

Cook until softened and sweet, stirring occasionally

Next make a roux. Place the butter in a small saucepan over and medium heat, slow to melt then add the flour, stir to combine and cook for 1-2 mins

Next add the ale, stir to combine, followed by the cheese

Allow the cheese to melt, stirring often then add the mustard and Worcestershire sauce and season.

Lightly toast the bread, then top with the leeks, and spread over the cheese mixture.

Place under a hot grill until bubbling and golden
