Instant Pot Hong Shao Rou

Ingredients

2 servings
  1. 1 lbpork belly
  2. 3 slicesginger
  3. 3 clovesgarlic, sliced
  4. 2star anise
  5. 1cinnamon stick
  6. 2 tbspshaoxing wine
  7. 3 tbspdark soy sauce
  8. 1 tbspregular soy sauce
  9. 2 tbsprock sugar
  10. 1 cuphot water
  11. 3dried shiitake mushrooms
  12. 1 1/2 tspcornstarch

Cooking Instructions

    Cut pork belly into thick slices, then heat a tablespoon of oil in the instant pot on saute mode.

    Once the oil is hot, drop in pork and saute for 3 to 5 minutes, stirring occasionally to keep it from sticking to the bottom

  3. 3

    Combine the rest of the ingredients except the cornstarch in the pot. Set instant pot manually to 30 minutes at high pressure.

    After pork belly is done cooking, open the lid and set the pot to saute again. Stir in cornstarch and let the sauce thicken and reduce.
