Scrap,wash and thinly slice the lotus roots.

Boil the lotus till tender.

Chop the coriander leaves.

Slice the vegetables.

Heat oil in a pan.

Add in onion and fry till it starts turning brown around the edges.

Add in all the ingredients and stir them well.

Add in 1/2 a cup of water and cook till water dries up.

Cook covered on dum for 5-7 minutes.

Serve hot.
