Another quick and easy mid-week recipe using lean turkey mince.

Preheat the oven to 180degrees. Fry the red onion in a tbsp oil over a medium heat. When soft, add the garlic, mushrooms and chilli and fry for a couple more minutes. Then add the turkey mince (breaking it up with a spoon) and fry until starting to brown.

Next mix in the oregano, cumin, tomatoes, parsley, seasoning and crumbled stock cube and simmer for 15 minutes.

Meanwhile, place the peppers on a baking tray, coat with a little oil and cook for 15 minutes.

Remove the peppers from the oven and fill with the turkey mixture. Top with a little feta and cheddar cheese and bake for another 15 minutes until golden.
