  • 4large sweet Potatoes (sliced)
  • Salt
  • Oil for frying
  • For the sauce; 4 tomatoes, (diced)
  • 1large onion (sliced)
  • 6scotch bonnets
  • cubesSeasoning
  • Thyme and curry powder
  • Black pepper powder

  1. 1

    Heat up oil for frying. Sprinkle on the sliced sweet potatoes and mix properly.

  2. 2

    When the oil is hot enough for frying, put the potatoes and allow it to cook.

  3. 3

    Stir to ensure it's evenly fried and remove from oil. Allow the oil to drain off and serve with desired sauce.
